Ingredients

  • 2 lbs skinless chicken thighs (can have bones or not)
  • 2-5 canned chipotle peppers
  • 1 14.5 oz can of fire-roasted tomatoes
  • 3 garlic cloves
  • 1 chopped onion
  • 3 teaspoon kosher salt
  • black pepper
  • 1 teaspoon cumin
  • 1 teaspoon Mexican oregano or marjoram

Optionally

  • chili powder
  • bay leaf
  • smoked paprika

For Garnish

  • tortillas
  • avocado
  • cilantro
  • lime
  • Cojita cheese

Instructions

  1. Preheat oven to 350F if braising in the oven. You can also cook this in a crock pot on low for about 6 hours or on high for about 3.
  2. Use an immersion blender to blend the braising liquid into a smooth sauce or not.
  3. Shread chicken and return to sauce.
  4. Make tacos!
