Chicken Tinga
Braised chicken for tacos, nachos, and related foodstuffs

Ingredients
- 2 lbs skinless chicken thighs (can have bones or not)
- 2-5 canned chipotle peppers
- 1 14.5 oz can of fire-roasted tomatoes
- 3 garlic cloves
- 1 chopped onion
- 3 teaspoon kosher salt
- black pepper
- 1 teaspoon cumin
- 1 teaspoon Mexican oregano or marjoram
Optionally
- chili powder
- bay leaf
- smoked paprika
For Garnish
- tortillas
- avocado
- cilantro
- lime
- Cojita cheese
Instructions
- Preheat oven to 350F if braising in the oven. You can also cook this in a crock pot on low for about 6 hours or on high for about 3.
- Use an immersion blender to blend the braising liquid into a smooth sauce or not.
- Shread chicken and return to sauce.
- Make tacos!
